Det amerikanske medie, Seattle News gengiver nyheden om, at NOMA fra 2016 vil tilbyde vegetarisk menukort i den varme og lyse del af året.

1. NOMA TO CLOSE, REOPEN AS URBAN FARM: It’s often called the world’s best restaurant, so the news that Noma is shutting down is big in foodland. Don’t panic, though, if a trip to Copenhagen to eat there is on your bucket list: It’s going to reopen, and the second iteration will have its own urban farm. But what’s most interesting about the Noma news is that the restaurant will be all-vegetarian for half the year the non-freezing-in-Denmark half; vegetables don’t grow so well there the rest of the time. It takes guts to go meatless of course, having Rene Redzepi’s reputation helps — will any of the Northwest’s best chefs follow suit?
